In Vanilla MW, you get the top listed effect of the ingredient based on your Alchemy skill. It can also increase you Alchemy skill by successfully eating.
However, with the Morrowind Code Patch (MCP) on Nexus, which is highly recommended, there is an option to always have the PC get the top listed effect when eating an ingredient.
The MCP fixes many known bugs in the game.
There are quite a few mods that change ingredients and gameplay. One even causes damage a day later after you eat something like a diamond.
Yes, you can eat any ingredient in the game. Including wolf pelts and other crazy things.
I recommend getting the MCP and then exploring mods that require you to eat and sleep, if that interests you.
In MW, you never have to sleep, except 1 hour when you want to level up.
