Report a translation problem
The S is completely dependant on the score. Which is why, you may notice that sometimes you took the combo to the end and also got an S, but it's still not a P due to a missing element like the topping or any secret, including treasures

For bosses, you can only take a few hits. For P-ranks, get every major collectible in a level while keeping a constant combo, and don't get hit on bosses. Good luck!

Secrets contain lots of extra collectibles that can increase your points, and collecting a Toppin' also increases your score considerably, but getting all of each is rarely necessary to get an S Rank. Nonetheless, it's a recommended strategy to go for all of the Secrets and Toppins as the higher the score, the easier it is to maintain an S Rank during the level's escape sequence.
As others have said already, with boss battles, you can only afford to take a few hits in the battle, no more than 1 or 2 IIRC. Taking only those many hits will net you an S Rank. Taking no hits at all will earn you a P Rank.
