I personally think Pizza Tower's success will jumpstart the inspiration of both fangames, and blatant rip-offs, as well as proper competitors (like AntonBlast).
Ultimately, I think we would hear more about Pizzas-Tower clones than wario-likes.

Same with Warioware Twisted since the Switch has gyro support.
There's also no combos to worry about maintaining until the end which is what you're encouraged to do in Pizza Tower with the flexible moveset you've given, while Sonic is all about maintaining your momentum and flow with the simple moveset he has.
Both games are tricky to master in their own ways.
If the same level design as PT was in Sonic it wouldn't be playable.
i doubt AntonBlast would really be a competitors since Peppino showed up in an Anton blast game or spin off if i remeber correctly
