Early on your skills are very low, assuming you're playing Story mode, it's honestly best to just stick to quests. Caribbean in a Nutshell, which you pick up from Fadey the second time you meet him, is a little difficult but yields a nice amount of early money. The Final Lesson questline, which will give you a quest in all 5 French colonies, are also varying amounts of difficulty and yield decent money. Really just focus on doing these while you recruit officers from taverns to start filling out your roster. Then you get to freeplay:

Once you have a solid navigator and cannoneer, you can start to take on stronger ships and upgrade to a bigger ship yourself. Plundering traders can yield some solid cash.

Acquiring a good purser would allow you to start trading yourself. There are various trade routes that can yield good money but really just gotta explore the Caribbean and assemble a log of store prices to figure out good deals. Trading can be extremely profitable if you have a good purser and know what you're doing.

Smuggling contraband is also very profitable but this tends to come in later, capturing slaves from surrendered vessels and selling them to smugglers is probably one of the most profitable things to do in the game, but to do it in a high enough quantity requires bigger ships that you need to be later in the game to pull off.

i am playing sandbox at starting also choosing exploration mode

With sandbox mode your option is very limited, running random transport mission from store and noble is the easiest way, and hope governor give kill bandit mission or get package mission
When you have around 300k, a ship with 2000+ hold and a spain flag you can start trading, first buy a 20days trade license at Willemstad and run trade run between Willemsted and Caracas(and other spain city in the south) can get you more money than you need

Treasure Maps can yield a decent payout, but might require a lot of walking and dueling to get to/from them. The treasure may include weapons, armor, maps, tools and valuables of all kinds. Best payout i got, was 100k+.

If you have the patience and decent enough ship, you can take a specific store quest. Sink or capture a rivals trading ship. If you take the ship over, you will get free trading goods to sell for basically free, on top of the payment.

Small time cash can be made by entering and plundering houses in the cities, just dont get cuaght by the inhabitant.

Simple simple ez method to make a few thousand (or more) in a ONE minute, early game.

1) Go to a merchant at a stall who sells gunpower and balls.
2) Craft a paper cartridge - will cost you mere hundred or two to craft a lot
3) Sell the paper cartridges for several thousand.

Rinse and repeat every habor.

How do I get that quest "The Final Lesson" that covers 5 French colonies?

How can I recruit officers from taverns? I only got a navigator and I think I got him from main quest.

Officers appear by random chance in a tavern. If there is none, leave the island, wait a day and try again. Or sleep at the inn, or load a save before entering the town.

OR load before you enter the tavern... go in. They generate when you enter for the first time in a day. You don't like the results. Load, and enter again (of course don't gamble, because the game's anti-scumming delight will penalize your gambling for "cheating").

Once you hit rank 4 you'll be approached by someone at the dock of each french colony: St Pierre, Basse-Terre, Capsterville, Tortuga, and Port-au-Prince. If you complete all five (the Basse-Terre one has two parts, make sure you return there after completing the first part) then you will be approached upon return to St. Pierre for the final part of the questline.

Press "enter" to prop the in-game menu, then select "craft"
But in order to do this, you need to unlock the crafting perk from your character personal abilities(-F4).
