The first mine is pretty much a tutorial mine. The monsters are pretty easy to fight. They are interesting because they each have their own specific attack, and so you learn how best to fight the different monsters. The second mine has harder monsters. I haven't completed it yet (I restarted the game once I reached gamebreaking bugs, multiple times), but the moving statues were quite frustrating for me, especially since there are identical statues that don't attack you on each of the mine levels, so you don't know in advance when one is going to start attacking you.
So yeah, I found it interesting. Others may not. YMMV.
Basically as you level up your magic stat you deal more damage, get more crit chance, and gain mana steal. The spells you get can deal with enemies and you can craft potions that enhance your basic attack. Theres also an invisibility potion that lets you skip combat entirely.
Its definitely above the level of stardew valley but not as complex as Sun Haven.
