Though, unlike the remaster soundtrack, the original game OST is far from complete, due to the old 70 minute audio CD limit.
As for extracting it, the most commonly used tool for that is XCC Mixer, from the XCC Utilities pack. The music are a bunch of .aud files inside scores.mix, which is inside main.mix. Note that in this release, there's four main.mix files, one for each CD the game came with. The expansions actually have different music, so you'll need to dig into all of those.
XCC Mixer can convert the files to .wav, which you should be able to play in normal media players. To convert it, you right click on the files and select "copy as wav -> pcm" and they end up in the location chosen in the second pane.

The remastered soundtracks, which include all original music too, are available on Spotify and Apple Music, and were also included in the physical boxes of the remaster.
