how to remove the voice assistant in this game?

Go to the settings screen (it's in the main menu), open the 'Sound' tab, scroll down a bit and then disable the 'Text to Speech' option. Apply the settings - no more voice assistant!

Ubisoft turns on voice narration in menus for all their games by default.
