Edit - Got it working. The solution wasn't too fiddly in the end either. I've written the steps below and tried to keep them as basic as I could for those who (like me) are new to the Steam Deck, but the actual procedure is fairly simple.

So this so far has managed to fix the issue that would cause the game to hang until the Steamdeck restarted itself. But the game still crashes, which I'm assuming is what was causing the hang and restart issue before.
Edit 2-
Scratch that. It hung and forced a restart of the Steamdeck again. This time I had the performance HUD up though. It looks to me like there's just a memory leak somewhere. When first launched it's using about 1-2 GB, but when it hung it was using all the RAM three Steamdeck could allocate (over 14 GB).
I don't know how to start Ubisoft Connect with Proton 8 and the game with Proton 7, or if that even possible, giving up.
I've tried Proton Experimental (with and without the beta), Proton 9.0-1 and Proton 8.0-5. What do I need to do to get this game to run?
