Last I remember was Aion (the MMO), but even that was limited to select few areas, limiting it to gliding everywhere else - and flying was that game main gimmick.
Reason is that developers don't want the player to skip the entire level design by just flying from point A to point B, platform challenges included.
I will indeed have to imagine what you said about WoW because I've never played it.
That being said, this game has better gliding than, say, GW2 does, simply because stamina bar lasts a lot longer and you don't have to suffer sanity impairment to get it or improve it (e.g. Skyscale grind in GW2).
MHS2 Wings of Ruin has full flight with some selected monsties, but you have to play through like 50% of the story, if not more, till you unlock it. It's on foot or on a monstie's back till then. It's cool at first, flying around aboard "airship" Rathalos or Bazelgause, but it becomes rather dull too after awhile and serves only one handy purpose - looking for specific monster spawn when hunting for eggs from above is easier. Very little is involved directly with the mechanics in the game.
