why tf is there not an offline mode
I just want to play the game when the servers are down

It's simple, there is no offline game play at all. Everything runs in server sessions and your PC is acting like a TV, displaying everything that is going on. The game is setup to have both a service and client running to perform all tasks required. Take out one of them and you don't have a game anymore. Hence, when these services are closed, it's game over.

Not really, no.

A pirate is still going to pirate the game regardless. The only difference is that the pirate would need to create a -> free <- Ubisoft Connect account to play their pirated game. Online-only wouldn't stop a pirate from actually playing their pirated game.

Online-only imo, is used as a means of control.

Ubisoft wants to eradicate the ability of a person to own a game that they bought and paid for, so the best way to do that would be to tie their games to a internet connection, where they can then pull the plug whenever they feel like it.

Just in case you're not aware of what kind of Publisher that you're buying games from.
