Sorry to hear about these audio issues! Just to expand on what Cataleya has said, Rocksmith 2014 has a requirement of 48 kHz. Many Bluetooth headsets are not capable of this, and are therefore not compatible.

Do you have any Surround Sound settings enabled?
Either in-game or via other software?

Yes, I have 7.1 enabled with the JBL software and windows sound settings. Though, I have had surround sound enabled with other headsets before, and didn't have issues then. That was back in and aroun 2018-2019

For testing, could you please try disabling these surround sound / 7.1 options and see if there's any change?

I have the exact same headset and am facing the same problem. The problem occurs only when I plug my headset with the USB cable, the audiojack works fine but I prefer not to change cables every time I want to play. It feels like the headset takes over because I can't even hear the sounds of the game.
Furthermore, the game won't even take input from the guitar.
Btw the wireless one does work with Rocksmith +
