When you open the song, press the spacebar to open Riff Repeater. Highlight the portion or the entire song that you wish to lower. Lower the difficulty to whatever you want. You can then restart the song and it should now be playing at the lower difficulty level.

Good info above. I have reset the levels on songs that it has been a while since I played them.

Also if you find the songs are leveling too fast, you can hit space at the start screen and adjust the Dynamic Difficulty --> Leveling Speed. And slow down how fast it levels all the songs.

As caldaar mentioned, but there is also a seeting for how fast you will level down. Play with that a bit as it can help keep you where you want to be.

I know it's not what you're asking but I find it easier to set the song to full difficulty, play through and keep track of bits I need to retry then go back over them on riff repeater but slower until I can get them right. Might be a little early to do that, I can't remember when I started doing it.

I have started doing that. But usually on songs that I have already hit 75% or more on, so that I can finish up on them. Of course that depends on the difficulty. Sometimes I just keep it where RS suggests, but then go into Riff Repeater to figure out exactly what it is asking me to do. I also set the number of repeats it requires before leveling or changing speeds to a higher number so that I get that part down perfect before moving on.

All the great options and tools available to you. Use them all when you feel they are right for you.

The problem I have is I like all of the difficult parts. So, I work on those.
