Which horse? Deluxe or New game plus?
dont care about horse appearance, which one do i choose the last one for all extras?

Yeah, there is nothing extra at all. I thought the same thing when choosing the black and red new game horse, the game said "BUT YOU HAVE DELUXE EDITION HORSE YOU SURE FAM????" but after a little research found out there is nothing extra at all.
