How to sheath your sword?

How do you sheath your katana on a keyboard or xbox controller? I don't see this option anywhere

you can but you need to progress a little on the story , after the Ghost of tsushima Title and then when you press D-pad right you will see four prompt (up,left,right and down)

Swipe right on the DualSense pad if DualSense. You can't use any Touchpad features until after the title card sequence (where it says Ghost of Tsushima, after Kotuun Khan knocjs you over the bridge and you wake up etc.)
