!! Pick the white horse in the beginning !!

Spoiler why you should pick the white horse:

The first horse you choose dies, if you pick the black one because its cooler, later when you become shinobi/ninja you will be stuck with a white or grey horse. Leave the black option for 2nd half of the game. The white horse for the beginning fits the story as you are Samurai with honor not using stealth.

Ooh ok thanks this is great to know because I 100% would have taken the cooler black horse and been upset not getting to keep it xD

I think they made a mistake by letting players choose. It should have been forced.

I got to The end of Act II and then i saw that my horse died in the cutscene... i said to myself "really... are you telling me that my Deluxe Edition Horse died???

The wiki says it is safe to take the deluxe edition horse since it is the only one that will be offered a 2nd time

For the Digital Deluxe/Collector's Edition, if the player chooses the Golden Buckskin horse the first time, they have the option of choosing the Golden horse a second time during "Heart of the Jito." This is the only horse that can be chosen twice during the initial playthrough as the Black, White, Dapple, and Thin Brown horses can only be picked once. However, the name used for the first Golden horse cannot be reused.
