Like mentioned above yes, you can definitely rollback in this game (Tip: save the whole GoT Steam game folder in another place so you'll have a permanent backup)

Edit: Any way to prevent future updates? Steam really sucks in this regard.
Sorry to say this, but pirating the game is the only way i know.
