This game plans to unlock in approximately 3 days
It took me 22 minutes to unpack HFW which was around 100 GB on a Ryzen 5800X and that includes downloading the Day One patch. I would guess it would take less than 15 minutes to unpack GoT on a 12700K which is roughly equivalent to a 5800X
Also note that unpacking a pre-load takes double the space available to fully unpack or you may... end up regretting having to delete stuff.
Some have mentioned that odds are if you are playing this game then CPU is probably fine for unpacking because the CPU requirements aren't low, but the requirements are actually extremely low with minimum CPU being a Ryzen 3 1200 which is a joke compared to the typical modern gaming CPU. It can keep afloat, but this will absolutely not have a desirable unpacking time.
