Its a skill issue for sure, but that's what makes games fun, by obtaining that skill to overcome the obstacles in front of you. YOU CAN DO IT
You should practice more, the combat in GoT is one of the best open world combat I've ever played recently.
The game have some randomness in the combat system. Blocks and dodges are easier to perform if you manage to figure out the correct distance between you and the oponent.
