For the axe ballerinas for example I found that unless the dodge lands me slightly behind them I will get hit regardless.
Meanwhile spears are quite easy to dodge regardless of early timing because unless you are dodging directly into/away from them you will sidestep their attack.
Reacting to enemy's weapon position in general is better than reacting to light cues.
It does when you level stuff up, pefect dodge leads to a lethal attack.

Most if not all enemies are right handed, roll towards their right arm and you will almost always avoid a hit, it's the same in Dark Souls. And if they are left handed, roll to their left arm.
