Not sure if you have noticed OP but there are also:
- dear (that don't attack and offer no reward)
- yellow birds (they lead you to stuff)
- normal birds (just for atmosphere, does nothing special)
- boars (can attack you, mostly runs away, gives pelts)
- bears (attacks, gives pelts, hates Arrow Meets Face stance)
- dogs (best buddy)
- horses (friendliest taxi service on the island)
- Megalodons (okay I'm lying now)
- Grasshoppers (Gemini and their weathered friends)
- Vile beats (humans, I totally meant humans)

Boars and Bear are sometimes in fields but mostly they're in forested/bamboo areas. I've seen bears particularly frequent around north east of the Hotsprings town (the one with the big hotsprings where Ishikawa, who teaches you archery) is. You should find some blue flowers near there (unless those aren't visible until you start the legendary quest?, but if they are it makes it obvious the location I"m talking about) where I've seen bears quite regularly. Either way, though, they're pretty common as you travel through bamboo areas. You might hear them and see an indicator from them noticing you as you ride. The extended detection range perk makes it easier to locate them in such dense bamboo areas due to the red outline (have to stop moving if riding horse to use that on horseback). These are required to increase the ammunition amount of arrows/thrown items.
Deer are everywhere, even in town sometimes. They make a pretty loud noise that, honestly, sounds more like a bird call and come in groups of several dear making them hard to miss. Completely used for atmosphere and no other purpose.
Dogs are found in bases and often come alone or in a pair. By default, they're only aggressive but there is the DLC (and the included DLC charm you might have gotten at start of the game, otherwise play DLC to get it Ithink) which lets you sneak up on a dog and pet with R2 (or similar button) to befriend them as an ally with certain perks while stealthing (or later if you get caught fighting) at mongolian territories and such. They're kind of shaggy ugly things though so it might not be obvious they're a dog lol...
There are some random smaller then the yellow birds that are spread around the world as purely environmental effect and when shot don't do anything special like hides. I don't think they even make noise (but I could be wrong).
Grass Hoppers/Crickets are found as collectibles in certain cemetery and are part of the flute weather control unlocks. They're in what looks like a bird cage.
I forgot, until the two above mentioned....
There are frogs, though I've only seen them at one spot with frog statues for a temple and you bow to the statue to make tons of frogs appear. I've seen similar for a fish event (bowing at bow signs, aka down on the touchpad) does certain environmental special effects at some locations with those signs.
Crabs can be found at the beach as they said (at nearly any beach really).
