Both sources also mentioned that support was at first only possible with AMD GPUs, not sure using Nvidia is possible already or still in the workings, but judging by the changelog it isn't there yet...
ps: funny thing is that you mentioned it working on the older 5.4 kernel, so they did do something right with Nvidia before, even if unannounced.
edit: one more thing rings a bell now... there has been recent friction between linux kernel devs and proprietary module/driver writers due to some inner working features that aren't allowed for incompatible licencing reasons... it did affect nvidia driver at some point but not sure it happened in 5.8.x or later branches
The AMDGPU Mesa driver is downright exceptional in terms of performance, even often beating the Windows driver on properly optimized applications that are available on both Windows and Linux. This is particularly exceptional in that there are fewer per-program tweaks in the Linux driver.
The nVidia driver on the other hand, is a mess to say the least. It's improved, but hasn't kept pace with AMD. Currently all that AMD has to do to permanently dethrone nVidia in Linux is to release a higher end top of the line Navi 2 chip. (Something on a similar scale to their compute-only models except actually containing the video pipeline.)

Do tell us how it goes with kernel 5.8 once the new mobo arrives, hopefully everything will go smoothly then

Maybe the rgb lighting and fans won't be tunable from the OS, but otherwise everything should just work.

I tried changing the nvidia drivers, changing proton version, did the different combinations, nothing worked for me, the only thing I can think about is the new kernel that broke things up, last thing for me to try would be to find the first 20.04 iso and try installing it, but that would mean not being able of upgrading, sad but happens.
Anyway, was just to say that I think your problems are not finshed...
Please update your resolution, I'm curious to know how it goes, I won't be able to reinstall before this week end I think.
