Most will say Gnome is the best race for a Priest, since the PIE stat increases the effect of healing. That being said, you may not be a Priest forever since you can always class change later on. Even if you don't, the difference in race won't make that huge of a difference. Stats like VIT, HP, and LUK tend to serve all classes fairly equally as well.
For primarily healing, Gnome would be the way to go.
However, Priests make viable magic-defense tanks (they can wear mage gear for higher mdef rating). They can also wear the 2nd-best physical defense gear. A dwarf would work well for this.

Dwarves make somewhat good priests, but have low mana. Their piety strength and vitality really helps them serve as a solid frontline priest.
Elves make good priests due to their high mana, and not-bad piety. Their low strength and vitality makes it so they are heavily invested in casting spells, and not so great at murdering and taking hits because of their low hp.
Porkuls and Humans make the absolute worst priests. Both have 20 base mana which hardly makes up for their stats. Humans have pitifully low piety. Porkul piety isn't much better. Without a substantial mana pool, they are blowing a higher % of mana for weaker spells compared to other races. Dwarves aren't much better off in this area, as they are blowing extremly high %'s of mana, but the difference is that their spell strength is also higher.
Humans do benefit on the side of being a front line priest, stun smashing things and buffing himself to victory due to solid strength and vitality, but porkuls really do have the hardest time as a priest because all three viable priest stats (Piety-Vitality-Strength) are rather low. Well, piety is more in a medium area.
