Source - Carmen / Angela - Starts off pretty weak but the more damage she deals, her risk level goes up and she gets access to more and more anomalies / E.G.O. / Distortions to use, as well as just straight upgrades to her regular moves.
She takes some careful play early, but if you can scale her to WAW or ALEPH level then she is mental.
Red Mist - Kali - If you like Project Moon stuff, you already know who red mist is.
She's surprisingly a very balanced all rounder character. She has great air-born combo potential with Onrush and several moves that give you good air control. Neutral ground game is decent but nothing crazy.
Kether - Roland. The Black Silence - Roland has a decent toolkit with a lot of options, and is limited by some of his kit being only accessible via stance changes. Though that can be somewhat useful in certain circumstances for mix ups. Atelier workshop gives you access to your pistol and shotgun but ammo is very limited. Mook Workshop gives a couple short / mid range options but is very situational. Wheels industry is a big heavy hitter but very slow. It's main utility is it grants armour for a few frames when you first stance switch into it, so you can bait an attack into a wheels industry swap, and then punish their recovery. All in all my fav character probably. though they are all really good and well made.
Zwei Walter - Walter from Zwei Association. - Definitely a lot more toned down than the others, thematically at least. Has crazy combo potential. all his moves just flow so well together. Though he's definitely more ground based.
Lobotomy E.G.O::Sunshower - Potential man. - I've not played Limbus Company yet so I don't get the reference, (and I've not actually tried this character yet), but the mod is VERY highly rated.
I wouldn't be surprised if more project moon characters are in the works too. They are pretty popular.
I've got all of them so far in my modlist if that's easier than searching for all of them.

Even out of the above, Walter is really simple. So is red mist.
Prime (Minos Prime from Ultrakill) is really simple. Slow telegraphed attacks, but if you can take opportunity of openings, he hits very hard.
Nakmuay is simple. Straight forward close range brawler.
Exiled is relatively simple as a mid range melee zoner.
Between the likes of these and the default characters your friend could get the hang of how it works quite well before trying others. Honestly the above characters aren't even as complicated as base game Wizard or Ninja.
