if your problem is run out of herbs, spent your skill point to field medic skill (single player only) then. you will not need herbs any more
Thing about this game, as I remember it, it was much harder than I remember RE5 being (speaking of the first go-through on both). I started out playing RE6 on Professional, then slowly started to downgrade to Veteran, and then to Normal as it just got more and more frustrating lol. Requiring many headshots to beat the most basic of enemies got very annoying so I eventually settled on normal for the campaigns after Leon's.
Eventually I went back and finished everything on Veteran and think I nearly finished everything on Pro but not yet. Never tried No Hope though.
As for it getting easier, well keep in mind you are upgrading your weapons and skills along the way. It seems though that the enemies are just as hard in the start of the campaigns as they are at the end. This makes them harder to start with and easier in the end just due to you getting better stuff.

In case not:
Short version: Jake/Sherry earns an obscene ammount of ammo for all their guns and they can get a lot of herbs but F.Aid sprays are really rare.
Jake's campaing is the most easies campaing in terms of ammo, you have handgun ammo (In the first two chapters you can earn 300 handgun bullets easily). Chapter one has an obcscene ammount of herbs (You can easily storage the 17 and have a v+r on you inventory) .
They get a Magnum on First chapter (The elephant killer the most powerful magnum of the game) with a boos of 15% more chance to getting ammo for it and chapter two they get the sniper rifle (The most efficient weapon of all RE games) with a boost of 30% more chances of getting ammo.
Chapter 3 they earn on mid chapter the bear commander (If you complete the side task otherwise you'll unlock it at the end of chapter 3) and all assault rifles for some reason had a 50% more chances of getting ammo from boxes and kills +they are the most powerful weapon of the game.
Chapter 4 ALL THE WEAPONS get a 50% chance of getting ammo until 4-6 part, only that part the drop ammo chances goes down but in exchange of gaining health back if the chainsaw attacks you (I discover this on my first playthrough)
Chapter 5 you only get ammo during Chris/Piera story intersection. Is normal reach the final boss without ammo but easy to defeat since he will only do range attacks so you can use the stun rod or melee to kill him.
I love Jake's campaing but I admit it is also the easiest campaing.
