First are we talking about open world raid or River Raids (instanced)? Second, have you upgraded your weapon and put proper runes in slot for armour and weapon? It is easy to focus on only upgrading armour first and weapon when you get that prompt in gear that you can upgrade those items, but it is also important to how many arrow each bow can carry (you can change bow even during fight as long as you don't use that weapon - try again if it is blocked due to being in use).
Predator Bow (PB) with sleep perks (Needle) is good start at range and when enemies get close change to Light bow (more arrows then PB) and when you have used all arrows on Light Bow change to Hunter Bow (have also more arrow then PB).
Depending on how you have allocated your Skill in your skill tree you might even get back arrows from Raven auto loot or from corpses that are close when you have Light Finger active. Autoloot is important as it reduce time and you will also pick up healing herbs etc as long you have upgraded your healing pouch.
You haven't provided any information about what gear you are wearing, what weapon that you use (ranged and melee) and we don't know how you have allocated your skill points or which special ability (both melee and bow).
I would recommend to equip Needle (if you have found that bow - use YT to see where you can find that bow) as when you have that LB equipped it will also proc when you make use "Throwing Axe Fury" as it ends with sending two axe in air (range) which then trigger Sleep cloud at target, If you use Longbow which creates traps you will instead have small mines (traps) that will trigger when enemies get close that dead body that have spawn those traps.
We also don't know what difficulty setting you are playing (and there are different settings that can be adjusted to make it easier or harder even within those main difficulty tier)

I usually get close until I get notification about Zealot, open Order menu and read what kind of info there is about that Zealot in case that Zealot might have special abilities. Catch up on mount (use short press on "C" to Crouch on saddle and jump off saddle with climb key).
To stop Zealot from continue moving when they are mounted, use Predator Bow as it have best aim when target is far away and change bow to Light Bow for faster attack and more arrow when needed. Light Bow also have a shorter range (if you look at how arrows move in air you will see it is curved vs a straight line which decline in elevation if target is too far from you).
Later when you have more skill point and unlock more skill that trigger slow motion, then you also will have more time to control how to fight Zealots.
Try to get Iron-Cloud Light Bow as that bow will speed up your attack (slow motion) when you hit weak points (orange parts on body).

Use fire or poison (Ability) to take down large chunk of HP before Zealot will engage you. Be prepared to dodge if Zealot make use of Spear (ranged attack) or are throwing something at you to avoid loosing too much HP from start.
I have invested a lot my skill points over time on HP passives like Grit, you have to look closely for where you can get those points that help you with HP from all three path: Raven (yellow), Bear (red) and Wolf (blue).
Later you will also want to have all four adrenaline bar and there is a skill that can transfer HP potion (pouch) into Adrenaline for combat or preparation like activate poison on bow or fire before you send an arrow to target (same for melee weapon).
I play on Normal difficulty and haven't any issue to kill Zealots (as those are often single which make it easier to read their attack pattern).
Dive of the Valkyries are also a good tool to get those Zealots on their back, take away a bit of their stamina and a chunk of their HP.
if you can't manage Zealots, then look up in your Order menu and click on mark this Zealot (you have to get close enough - do not attack only ride close enough to trigger that stage - and you will get notification that identify that Zealot) so you can later go back and finish that Zealot when you have gained more Special skills and upgraded a bit more.
Also be aware that you can reset all skills, you can downgrade weapon and armour that you don't use and upgrade weapon or armour with mats you get from doing this, so there are tools in game to adjust if you need to just be done with a harder enemy then you are used to fight. You can also move runes from weapon or armour without any cost, so there are options to things different ways in this game.
And you can also change difficulty to an easier mode then Drengr or what ever you are playing at that is too hard to kill Zealot that are 18 level below your own PC and change it back to Drengr or that level you prefer to play in general.

Also, a note for OP; zealots are easier to kill if you get a sneak attack off on them, like assassinating them with your hidden blade or hitting them in a weakpoint while unnoticed, this also pairs nicely with poison and/or fire.
