Have yo used in game frame limiting for FPS? What FPS are your game running at? It is possible if you use higher FPS then 60 FPS that game engine physics will bug out.
This have happened in other games like Skyrim, so it is not isolated to UBISOFT games where higher frame rate can bug out physics in games.
Video to show how to set up a frame limit in game: https://www.youtube.com/watch?v=BPaL0iK_6rM
In case you have a high refresh rate Display, it wont matter for what FPS you set in game as display will still be able to show what GPU can deliver in frames without any impact like stutter or other visual issues.
