I suppose you are right about server being part of issue. Sometime starting Valhalla seem to end with issues to connect with cloud server which give error message until I restart computer and can start game and work as normal.
Playing Origins I have not had any of that issue to start game and get save games to sync with UBI connect save game server.
It is probably more players today that are still playing Valhalla and its DLC content, then Origins (as it is an older game).
Could also be the scale on servers to support how many connection that can be done for each game is set up different, so Origins might have a less restriction on population cap that can access at any given time the same server vs Valhalla.
As for bugs it is impossible to know if it is server issue where a short disconnect can cause game to get in state where it will the end with a crash if connection isn't re-established in time (same as some MMOs can run for some time until it get up to a critical point and will end with a crash when server - client can not sync any more or if server for some reason are under so much load that it can not continue and needs to flush data to keep some of its player connected and still be able to save other players data before it might become corrupt on sever side).

Could you use save game to enter game where this happened without any issues? One thing is a crash, another thing is to have a corrupted save game where you can not continue when this happen and need to use an earlier save that haven't been corrupted.
As long as you can play for 7 hour without saving, closing game and re-starting game, then I don't think this is something that needs to be high on bug fix list.
It is also possible that will changes from Windows Update (not everything that are done in each WU are documented to public), with NVidia, AMDs and Intel (GPU) drivers that also have updates on regular schedule and with all other drivers like gaming keyboard/mouse or gamepad controller that have their own updates that can sometimes crash any app including games.
Don't forget that RAM and storage devices (all types from NVme to SATA based storage and mechanical storage [HDD]) can also have errors in hardware including your Internet connection which also can send/receive packages that are corrupt or have errors.
So all in all just stating that it is Windows 11 24H2 or Windows 10 22H2 issue because that is what is in the main focus for UBISOFT ad EAC games (EAC are mostly used on MMO to prevent cheating and changes of game engine).
Logically the main issue here is MS and the complexity of hardware, apps (software) including drivers and all combination of hardware that exist and security in form of Antivirus and maleware detection. Before this update from MS nobody would point finger to MS when we talk about UBISOFT games.
OP create save games from main menu with escape>save, use quick save (change button to something you can reach often - especially before you enter red zones where you can't save - brown zones you can still create a save game) and take a break before 7 hour is up where you completely close down game [remember to save or use way point where you teleport to one and it should create a save] or even do a restart of your computer to clear out any back ground tasks in case there are some memory leaks that also can trigger crashes.
That is all you can do at this point.
