This is not a good Assassin's Creed game
If this game was simply called Valhalla and had no AC nonsense forced into it, then it is a great standalone game. But as part of the AC series, it's quite embarassing.

Origins still at least tried to work stealth into the game better imo, the last 3 aren’t AC games true, but I would say with Origins and Odyssey one could still apply the logic the op suggests “if they weren’t tied to the AC franchise they could be a good standalone game”, but that definitely doesn’t apply to Valhalla, this game is just bad, it takes what was wrong in Odyssey and dials it to 11, with the bland/repetitive world design, floaty combat, wonky animations, further butchering of AC lore and history itself, and the ugliest female character designs seen in an AC yet.

Ignoring all the other just wrong things in your comment, you are objectively far more ♥♥♥♥♥♥♥ if you think Origins tried to work stealth more into the game than Valhalla

You can't even aim smokebomb in Origins. You can't 1 tap stealth kill either. That entire game screams "I want Witcher 3 money plz".

Calling the games after Syndicate "stealth" is a disgrace to the genre

If you read, I said “tried” for a reason, it wasn’t successful, Origins is not a good stealth game, my point is that it was at least better imo than Valhalla by a significant amount, again Origins tried, both in gameplay and story wise to have an “assassin/stealth” approach, sure it failed, but not as hard as Valhalla.
Indeed, every game after Syndicate isn’t stealthy (despite the hate Unity did it better than Syndicate though).
But back to Valhalla, it is a failed game imo, it does everything worse than Origins or Odyssey, Origins did combat, story and characters better, Odyssey did exploration, story and characters better, Valhalla’s combat is just a floaty, glitchy mess, exploration is boring. Basically after considering each and every one of the "main line" of AC games, I would say Valhalla is easily the weakest entry so far.

It didn't try. What I listed are features dating back to AC Revs in 2012. The stealth aspect was left there because the devs need the AC brand to sell

I wonder if you ever played valhalla at all.
The stealth in valhalla is definitely better and more skill based than origin and odyssey. Enemies will be hard to detect you when you're wearing hood and walk slowly. Ubisoft also bring back hide in crowd and hide while sitting in valhalla. Those mechanics doesn't exist in origin/odyssey.

Assassination method in valhalla has more variety. You can shoot a pulley to drop heavy objects and kill enemies below, or plant a bomb to a dead body to lure other enemies end explode, shot a breakable ledge to drop enemies, etc.

Once you unlock advance assassination skills, you can one-stab enemy commander in QTE. In origin/odyssey, killing enemy commander in one stab is always based on critical chance which is heavily relies on gear you wore.

While AC has definitely gone in a different direction from the originals since Origins they are still fantastic games.

While I believe Odyssey has the slightly better game world/play. I’m a sucker for anything Viking themed so I prefer Valhalla slightly more

it actually has a better assassination mechanic than Origins and Odyssey. You headshot someone with an arrow, you do just that. Unlike Odyssey, where an enemy took 10 arrows to the head and still stood to F with you.
There is no aim assist in this game, but the aim assist in Origins always tries to F with you especially if you're using a controller.
