I found that the solution was that my game files were being corrupted during updates and running steam file verification resolved the random behavior.
Hi, what you're experiencing is *almost certainly* a corrupted save. You should be able to load an earlier autosave and lose only 10-30 minutes of progress (depending on how often you autosave), but if you don't see your autosaves or other recent saves in the list, it's likely that the corrupted save is stopping *the list of saves* from fully populating.
The devs are aware of this issue and working to fix it ASAP. Until then, I wrote up a quick guide on how to get rid of the bad saves:

Short version: Turn off cloud sync, move (don't delete) all but the most recent save file out of the saves folder. Load that save - if it works, turn on cloud sync again. If it doesn't, move that one out and move the NEXT most recent save file in. Repeat. Eventually you will be able to start with the most recent non-corrupt save and the game will load again properly.
