If Gordon were in stasis the aging process would be extremely slowed so even though he would be older he might only have physically aged a year or 2.
I think Gordon was put to sleep then transported X # of yrs to the game story future by G man and affiliates then awakened when they were ready to unleash him, so he might have only aged a smidge or not at all considering the speech G man gives him at the beginning of HL2.
Sounds to me like he's only been unconscious for a short period
