Unless you make paths with dragging buldings down to ground level, there are no other way. It may come in a future patch, once the devs are back from their much needed and deserved break. We might see things like more paths..

Make wooden decks. Wooden fencing turns into arches over the paths. The height of the arches varies. Make the minimum height. Extend the arches along the path and make supporting arches across. You can also make bridges.
Stone walls at the minimum height. Draw some lines with the wall tool and reduce the height to the minimum. Click on the wall, the curved line points will appear, move the points and refine the path line.
