ACTUALLY, BEST DOCUMENTARY IVE EVER SEEN. period.
Different cast, different EVERYTHING.
It was directed by Micheal Mann (the guy who did Miami Vice).
A lot of people prefer it to the other (more well known and famous) Lector films.
The movie is AMAZING, as is it's soundtrack.

As far as movies loaded to the gills with gore, you shouldn't dismiss the horror genre right off the bat. the game is definitely influenced by the straight-to-VHS slashers and "video nasty" horror films of the '70s and '80s, such as Twitch of the Death Nerve/Bay of Blood and Driller Killer, among several others not really worth recommending. Modern blood bath horror movies that I would recommend would be some of the French horror movies of the last decade, such as High Tension and Inside.
