Recs for this type of game flow
Not a discussion specific to this game. I'm finding I really enjoy games with a similar type of flow and progression, where one moment you're mining/managing/building/upgrading/crafting, and the next you're battling/trying to survive. Games with this type of flow are Wall World obviously, but also Dome Keeper which also features mining and upgrading, or Moonlighter with it's dungeon crawling and shop keeping, or Cult of the Lamb with it's base-building, or Siege Survival, or even Bastion and Hades which have these kind of elements where you get to focus on other things once you're done fighting.

I'm wondering if anyone can recommend other games with this type of game design that splits its play time between action and kind-of cozy management.

Dave the Diver has a similar flow i think. Dive for fish during the day, then sell sushi at night. I absolutely love the game!

But do you ever fight monsters or rival fishers? Or at least is that kind of like the Steam Dig games?

Do you like hacknslash or survival style games? kinda similar to those, Saleblazers is pretty fun. Loops are running around exploring and fighting then relaxed shop building and selling. All at the players pace. (shop is open when you decide to open it) I found it surprisingly fun.

in a similar vein to saleblazers, but to a much lesser degree, palworld alternates between fighting/capturing exploring and base building for resources. Fun, but probably not quite what you are looking for.
Did you ever play the 1st dungeon defenders? It has push yourself mid run hacknslash tower defence (nice combo) with reprieves to upgrade, but also had a long term character meta progression with equipment. It's not so much resource collecting as tower placing/upgrading loop then live action fighting (with running around to get resources and live pace upgrade/place/save from getting destroyed.

ps, the later games in the series were big letdowns.

I saw a game called Ocean Keeper: Dome Survival and it's basically this tipe of game but underwater, looks promising but it's still in EA so I think I going to wait a bit for it to be completed.

If you like the mining and recource management part, you may or may not take a liking to G.E.O or Mr. Driller.
