two character coop?
Is two player, playing one character each, feasible in this game? And if so what would be the recommended difficulty?

This really depends on what you mean. The inherent expectation is that you'll control a party of up to six characters. If you do co-op, you can split up who controls what character in the party. After you finish the prologue, you gain the ability to create custom companions, so a common/expected thing in co-op is to create a character for the co-op player to have as "their" character. So, typically, in a co-op game the host will control the MC, the other player will control their custom character, and they divide the other four party members between themselves.

If you do that, it really just depends on how comfortable you two are cRPGs and the game system. I think Daring should be more than fine for people with even basic knowledge of how to play cRPGs and make functional builds, Rogue Trader is quite a bit easier than Pathfinder in my opinion.

If you mean literally only control one character each and leave the other four party slots empty... well, that's certainly doable (after all, there are people that do True Solo runs on Unfair) but will be quite a bit trickier, since you're limiting yourself to 1/3 of the action economy, damage, and survivability of what's expected. The same basic question still applies as to comfort with the system, but if you want to do this and aren't experts at the system I'd suggest maybe Normal as a starting point.

Yeah, was thinking normal but was afraid it may be too hard being familiar with this type of game but not this one specifically. Thanks for your input.
