So about those Navigator insight points...
So I've been wandering around trying to get more NIP so I can actually open a path to a planet I need to get to (need 3, have 1 NIP). Been stuck on 1 NIP for a couple hours now, so am I just not going to be able to finish the game or do I have to buy NIP from somebody?

not exactly, its not a bad idea to create safe routes to-from very isolated areas just in case

No, you don't need three you only need one. When a route is red there will be a very unpleasant fight associated with it. When it's orange you will sometimes get a reasonable fight and other times Cassia will navigate through it like champ and get you additional NP to boot. So just knock the red ones down to orange. The main way you get NP is you get one for each new system you enter.

Moral: only spend NP on:

1. Reducing red routes to orange
2. Creating your own "super-highways" to strategic locations as you uncover the map

By far the most of your NP should be spent on category 2, your own "super highways". I always make these yellow. As you explore further into the sector these are a huge time saver for getting to quest locations and merchants etc. You will get ample NP to turn red routes orange and create a "super-highway" network during Act 2.

Unfortunately I do need 3. There is no route open and when I click on it, it says I need 3 NIPS. I'm only in chapter 2 and I have 2 quests left to do but can't progress any further.

Do yourself a favour and use ToyBox and give yourself some NIPs (at some point in game I gave myself 999 becasue it was chore and frustarting to farm them all the time and GOD SAKE - random warp encounters are just boring filler, same 3-4 maps with same enemies all the time...). Game lacks so many QoL features and has so many outdated, chore, frustrating half-baked mechanics and bugs that ToyBox should be at this point mandatory installation and should be included by Owlcat into game becasue you can't play without it.

Like at some point my colonies projects just bugged out and couldn't finish any. Thankfully there is ToyBox so I did complete them.

Just use ToyBox man, save yourself frustrations with this game.

Just use the mod and add 100 NP insight, the whole system sounds fun but the only turn into annoying random combat event

You don't get enough to turn everything Green/Safe, which it seems a lot of people feel the need to do. Yellow is fine; it's basically just a flavor event, and sometimes not even that.

Imo the system is more tedious then well done I recommend if you dislike it just use the toybox mod and give your self like 200 to make highways everywhere so you aren't constantly clicking... The warp events are repetative anyway and only like 3 out of the 50 give you Nav points. the couple fights you get never scale and still have act 2 level guys regardless of act.

Just soft-locked myself from the MQ b/c I forgot you can forge your own path with 3 Nav points. Used them to create a fast route b/w my colonies. Now cannot get to the system for Blades of the Void. Is there a higher chance of getting Nav points doing Orange vs Yellow warp routes? Or do I grind until I concede and download Toybox?

I don't know if orange+ routes have a higher rate of spawning navigator points, but they DO have a significantly higher chance of spawning fights.
A single fight takes the time of A LOT of yellow back-to-back jumps, so I doubt the points/time rapport is better on harder routes even if the points/jumps is.

Take a moment to double check the systems again first, though - I'm reasonably sure that when the main quest sends you to previously unconnected places it also spawns a red route somewhere in most cases.

I was able to get 3x Nav points from an Orange Warp Event that also spawned a Chaos Marine and a gang of Bloodletters. Also, it seems you can bypass an Orange level combat if you have either 100% cargo for all three of melee, armor, and ranged weapons to give to your crew. Or if you have 100% holy gifts to ward off the Warp. Not sure if these are expended or not on use. But its a good reason to keep some trash gear on-hand if you don't want to grind.

I got given 15 NIP at some point - but I can't remember how I got it... Which isn't at all helpful I guess haha.

You shouldn't need to create new warp routes all that often. I'm about to finish chapter 2, and I think I've created new routes maybe twice - if that? And I had enough to reduce orange and red routes down to yellow. And then you get 1 new NIP every time you click the "chart new routes" in each system.

I'm sitting on 6 NIP and I only haven't visited the 2 isolated systems at the end of chapter 2. Frozen something or other, and emperor's palm?

At time, you can see a star system on your travel map, but you do not have any available route to travel towards it form any of your known/explored systems.

You can spend 3 nav point to create a direct route from your current system to the one you wanna get to, doing so creates a dangerous (violet/black) route towards it

You can then just use the route to travel or also spend 1-3 points to make the route safer for travel aswell

NP system could use a re-work. Cycle-grinding NP through jumps for a random event is not great. Just did 10x jumps through a three system loop of 2x Yellow and 1x Orange. The Orange jump gave me an event for 2x NP. One shy of what's needed. Back to grinding...
