Yeah, but your actual chance to parry will never go above 95%, even if you have +150% it just means that the enemy can reduce your parry by 55% and you'd still be at the cap.
parry is parry chance against an enemy your own level, with similar Weapon Skill.
lot of bosses mostly will have more (sometimes way more), some skill/perk will lower your parry. so ... having too much isnt always lost.
You can over 100% or armor too.
if you get 200% armor even 50-75% armor pen wont do damage to you.
and for dodge its against dodge reduction, some weapon reduce your dodge when hitting you so going over 100% is not lost,
