The game rerolled my 20 "Secret ending" achievements without me telling it to.

I just did what were the last two achievements I needed - "Beacon of-- NOPE" and "Full Throttle". When I got back to the main menu, however, and checked the achievement list (I have a mod that just lists "The Payday Secret" as a filter category) it suddenly had a bunch of different achievements.

So now I'm rerolling over and over but I keep getting achievements that range from "maybe" to "screw that noise" in terms of difficulty.

I believe others have already explained it to you; the achievements get rerolled when the piano puzzle is done again, even when in other player's safehouses, or when helping others to activate the piano puzzle.

For the second half of your post, take your time to complete them. There's no rush. Apart from a few tricky ones, the rest are manageable.

Except I didn't reroll it, and was never in another person's safe house. I did the last two achievements I needed to do, but when I checked the list again it suddenly had an entirely different list. It rerolled by itself. Not by any prompting from me.

I don't think anyone can do anything/provide a solution for you at this point since it's already rerolled. However, if it does reroll again on its own, do try to recall/post what happened.
