The lore behind Thousand Sons is actually pretty interesting if you look into it. They even mention the burning of Prospero in this game.
They were the most loyal traitor Legion, that was basically forced into becoming Traitors, no one ever trusted them to do them being the legion with the most Psykers.
Inside them are sand,dust and magic to make them at least walk
When you kick their head off - Magic and Soul are leaving the Armor
after a spell used by ahriman, their chaptermaster? all the non-psyker members got reduced to dust, sealed in their suit, while their psyker members got strengthen
I think i remember a bit of Lore that statet, only Magnus could do this, but either that got retconned or its just a bit freedom of creativity for the game.
Only witches of the thousand sons are in flesh and blood, but i could be wrong. It's too long ago since i read about their lore.

Long version: ~12 thousand years ago before the events of SM2 the Thousand Sons legion was the most psychically gifted legion of all that served the Emperor of Mankind. However, that came at a cost of their troops quickly mutating under the influence of warp energies they conjured to smite enemies of the Imperium, eventually turning into Chaos Spawn that you can see in Darktide. This flaw of theirs was called the Flesh Change.
Horus Heresy happened, and the Thousand Sons legion fell under the influence of Tzeentch, the god of Change and patron of all things related to Sorcery. Their Primarch, Magnus the Red, after a chain of unfortunate events that happened to him and his legion, was forced to sell his soul to Tzeentch himself in order not to get his skull crushed by his brother Leman Russ.
After the Horus Heresy, the best of the best of Thousand Sons, Ahzek Ahriman, is grown tired of the Flesh Change that plagued his battle brothers, and decides to use Sorcery in order to fix this genetic flaw of the legion, and casts the infamous spell called "The Rubric". This event is called The Rubric of Ahriman.
Of course this spell didn't work like it was supposed to. Instead of fixing the Flesh Change, this spell esentially struck the Thousand Sons marines with bolts of extremely potent psychic energy. If the marine was not psychically strong enough to withstand this flux of energy, he turned to dust and was sealed inside his suit of armor . These unfortunate marines are not dead, however. Their souls are trapped inside their suits of armor. These marines are refered to as Rubric Marines, or Rubrics for short
Those few that did manage to withstand this spell, were instead greatly empowered with ungodly sorcery, becoming the Sorcerers that you see in the game. The Sorcerers are the ones controlling the Rubrics to fight their enemies.
