For reference I have an S2 Xbox Elite Controller and this allowed to play the game with back paddles and all, fully functional with a wired connection but I am sure Bluetooth would work too.
managed to get my controller working reliably for the time being using this method, a bit of faff but better than nothing for those who don't have a PS5 controller at hand.
'you need to (on steam) go to game options (cog wheel then Manage) and then go to "Controller" the disable the "Steam Input" settings. Then before opening the game unplug / turn off your keyboard. When your in the game you can connect it again.
Very similar to older games but the game seems to only read the primary input device at the time of launch (at first) then once your in the game you can happily switch between keyboard and moue or controller as long as you don't unplug the controller.'

Thanks. Kind of bad Saber gated this behind an EA release window, then couldn't even have this feature working smoothly.
