can you share a link to a video/article/post or whatever it is was that lead you to believe that sm2 is running on ue5?
A rather old video but this was one, among many others saying "UE 5 Games Coming Soon." Etc
All I know is its from the same studio who build WWZ back in 2019 I think.
that's the exact one i was able to find. the only one claiming it's UE5.
but the video itself is an official gameplay trailer and 2023 gamescom demo (both several months old at the time) downloaded from youtube, spliced together and reuploaded back with a random watermark slapped on top.
i'm surprised that the horrible sound and image quality didn't raise any questions for you.
as to the OP: the game runs on saber's own "swarm engine"

devs are collaborating with AMD

with fsr 3 being promised

and have a good track record when it comes to optimization: snowrunner, world war z, both witcher 3 and kingdom come deliverence for nintendo switch.
no, there is no beta and no benchmark.
there is however info from press released limited version and it seems universally positive when it comes to game's perfomance.

so i wouldn't worry too much if i were you. your setup seems perfectly adequate.
that being said, it is always a good idea to wait for release before buying.
