They can eat and digest anything. They really don't need to eat for weeks if they don't want to.

If you're a poor guy living in the bowels of a Hive city that is run by Gangs and Cults, most likely you'll either life off corpse starch rations or hint for any kind of vermin that lurks in the dark...
Most likely they are eating corpse-starch. As for Orks, well they are a fungus but seem kinda meaty so my assumption is the texture would be like beef but the taste would be like a mushroom.
But basicly they can eat nearly everything.
The Imperium has Meat and Grains from different worlds but most of them cant afford it and eat Stuff called Corpse Starch and yeah it is what it sounds like.

Growing space marine eats specially prepared high-proteine, high-fat, high-calcium, high-iron nutrient paste tailored to provide maximum building materiel for their growth. Fully initiated marines eat high-hydrocarbon paste that have as much calories crammed into it as transhumanly possible. It's said to be so sweet, normal humans can't eat it without vomiting out their stomachs. The backpack of a power armour have a chemical reactor that can produce the latter, using space marine's ♥♥♥♥ for materiel and his solar converter reactor for energy to convert that ♥♥♥♥ into pretty much concentrated sugar paste.
Outside of missions marines can enjoy more normal meals fopr recreational needs, but they still have to eat superfuel-food from time to time because their bodies burn thorough calories at alarming rate just by existing.
When stranded and cut from supplies, marines can eat ANYTHING as long as it have organics in it. One chapter lost it's scouts on a volcanic world and they survived by drinking mineral oil and eating volcanic asphalt, and Raptors chapter survived on a deathworld by hunting and eating dinosaurs for like 50 years.
Jokes aside, Space Marines can actually feed on Tyranids (but they don't for obvious reasons), their digestive system can digest steel, so... So they eat what they have. And I'm sure it's not something anyone would want to try.
Speaking of agrarian worlds... They exist. There are a lot of them, but they often end up out of sight - simply because it's not interesting. They produce food for themselves and for the entire Imperium. On the other hand, hive worlds can also produce food, being (SUDDENLY!) food exporters. How about a nutritious paste made from the larvae of underhive flies? If not, you can always try the classic Imperial worker's dish - a corpse bar. Are you a vegetarian? Well, that's your problem. But maybe that slime that grows on the columns that hold the hive is a plant. It might not even be poisonous.
It's a popular joke that you can make mushroom soup out of orcs. But in reality, orcs are not just mushrooms, but a symbiosis of mushroom, plant and animal cells that form a single organism.
The taste... Well, I don't think it's worth generalizing to "the taste of mushrooms." Rather, the taste and texture are such that you're unlikely to want to eat it. Not to mention the biological danger of such a dinner.
As for hive cities, they get shipments from off world and recycle bodies to supplement it. Dead bodies are recycled into corpse starch and if shipment is late by a month(and it takes a ship a month to arrive from jump point to planet) then people start starving.
Mechanicus... Rely heavily on imported food, since they didn't come here to play Stardew Valley. Especially on a planet where you can easily get eaten even without the Tyranids.
