It's their IP. Question is, if everything is "fluid" & potentially subject to change, then what can ever truly be considered "canon" with this IP?
Everything is canon. Not everything is right though
Which I think is an excellent way to handle an overgrowing universe such as this and can easily wave away retcons. Of course, it does hurt "lore purists" because there is no "set in stone" lore. Everything is subject to change. Which allows players to further expand their own homebrew for the tabletop. Like how my Imperial Guard are searching for an STC, trying to discover it and unlock (unknown to them) all the Taco Bell recipes
Every form of media generally didn't care at all about what was canonical ten minutes ago, they just wrote they wanted.

I think it's just due to the ever changing world and the ability to just see the changes. Good or bad, regardless of perspective. People subconsciously feel like they don't have much say in anything, so they cling to older things for comfort. Or try to show off how cool they are for "respecting the past!" when it's just fictional content.
If it looks neat, I'm generally down with it. For example, I don't hold the sequel movies for Star Wars in high regard. But I will die before saying the Holdo maneuver wasn't ♥♥♥♥♥♥♥ awesome
EDIT: Just remembered, there's also cases of symbolism that's important to people, which I can understand. However, these are a typically a more "case by case" situation that relates to an individual, rather than say. The people in a faction, or anything to do with a group. However, modifications to a group can absolutely damage the symbolism of an individual if done to an extreme extent. A personal example for me would be if the Covenant was drastically retconned to actually be some rather good fellows, and made Thel Vadamee the baddie. This would drastically change his redemption story arc, and the meaning of his Mark of Shame to me. However, if they said there were women as sangheili warriors, that doesn't really change much in terms of the overall story that played into the symbolism present with Thel Vadamee.
