Why remove multiplayer?

It's offline. There's no internet functionality, no accounts, and no server to connect to. I've been an advocate since before launch for them at least having peer to peer functionality for those who want it, but honestly it's pretty unlikely to ever happen.

Honestly I'm happy for no multiplayer since most players connections are terrible ... so I'm fine with no multi player and besides mods exist thankfully.

Because all of the online aspects were pretty much worthless. Even in the online version.

PvP was objective garbage; if you weren't a meta monkey, you were hosed.
Guild isn't needed due to the material crunch, and all the cards being added to shops.
A number of the raid bosses were less than well designed and plain not fun.

Culling the online content was honestly a boon. The loss of co-op levels is regrettable, but it is what it is.

As of now there's a mod to restore (most) of the Coop Stages (although as of now there's no restoration of online capabilities):
