There's only 2 servers; Crom (PvE) and Fury (PvP), When I did a PST morning numbers count there were just over 200 players on Crom and only 74 on Fury.
kind of / maybe / not really. You have the 1 expansion and 3 Adventure packs; Turan, Valheim and DragonSpine. Plus they've gone a couple limited time servers; 1 PvE and 1 Pvp, and then there's 2 modes / contests you can try; Unconquered to see how long you can go without dying and Onslaught which is a wave fighting thing.
Yes, both by some of the bigger guilds and in PUG's as I see calls for raids in global when I play.
I had a sub when the game first came out, played for a year and then came back when it went F2p and have been F2p ever since. You really don't need a sub as leveling up to max (80) isn't that hard. It's if you plan on continuing 'past' 80 and raiding you'll need to sub as most of the good faction armor costs more than the 10 gold F2p limit.
The Hyborian Conqueror Collection would be a bit pricey for you right at the start. DragonSpine & Godslayer are both lvl 80 zones, Turan is lvl 50-55. You can get into Valheim starting at lvl 20, but you have a lot of other lvl 20 zone options. So you'd be buying stuff only useful down the road.
Unlike other games there's only 2 account types; F2p or Premium (you have an active sub) so buying the collection won't unlock a thing for you just because you've spent money on the game.
There is a Sub you can get, but it really doesn't give you a lot of pluses; extra XP, an AA point each time you level up (but you can get those via the daily login bonus too, so all you're looking at is 80 extra points - just to compare I have a totally from day 1 F2p account with 276 AA points on it), and as I've pointed out the gold cap unlock which only stays unlocked while the sub's running.
There's also a loyalty reward program where you get free stuff for the continual months you keep your sub running and there are a couple of useful things from from.
My suggestion would be to start out F2p to try out the game.
