Welcome to TTRPGs! You are the exact right player for Fablecraft. There are people here on the forums, of course, but you might want to check out our Discord to find a group of randos. There's a party finder channel there, and groups have been forming each day since launch.

I think what you're looking for is an in-game notepad or even a Game Master Guide builder. These are on our roadmap, for sure! Fablecraft is great right now for on-ramping new GMs. I think experienced GMs will find a lot of nice tools, but will want more from homebrew and campaign creation. That's all coming as we've only now entered Early Access.

Matchmaking is on the roadmap, for sure! it'll just come later in Early Access.
While this project is still in development, I would suggest something like Wildermyth, For The King 2, Dark Quest 2, Divinity Original Sin (Series) or Baldur's Gate 3 (in that order). Or, you could play various Dungeon Crawl style board games like Descent, Gloom Haven, Mansions of Madness, etc on Tabletop Simulator.
If you want something more solo style, Fabled Lands and Abalon are good.
