Not true; there is a hard mode that you can select at the beginning of the game regardless of who you play as or choose to recruit.
Fear and Hunger is a single player RPG. Character balance does not matter, nor should it matter. Having the difficulty balance out regardless of a player's actions seems to me to be quite boring, honestly.
I don't think that's true. My first playthrough (f&h mode) I started as Abella (so obviously couldn't recruit her) and didn't get any companions until near the end just before going to the museum. I did fine.
Abella is absolutely a strong companion and very easy to get but not necessary. Like the Woodmans and the dogs at the start can be soloed without the need for her as a companion. Like some starting characters will just 1 shot the dogs so I don't really see why you would even need to juke them. Huntsman can be a bit rng but throw glass in his eyes and lop his arm off and he's done for.
You are absolutely right that it is hard to pass on grabbing her but I think if you've done several playthroughs, you're at a point to mess around and add variance to your playthroughs. From my limited time playing, seems there is a lot of ways to break the game and become super strong. I feel like the game has a ton of variety in how you can tackle it so you don't need to do the same formula,
Levi is easy, you can get bolt cutters on the same map as the beginning train and go get him day 1 morning. Osaa is more of a pain in the ass
