F&H 1 isn't as long, but it has semi-randomized layouts for replay value. You can think of it as a good starting point, but hey if you wanna skip to the 2nd game that's fine too.
2 actually has a combat manual to explain combat unlike the first game which gives you one npc you have to reach in the dungeon and is vague enough many people seem to misunderstand how combat works even after talking to him. Honestly more newbie friendly. You'll find 1's combat easier even just reading 2's manual despite rev not existing in 1 even just booting up 1 immediately after reading it.
The first one is also much more polished than the sequel in many aspects. Story has a spesific focus. Also movement feels much more snappier. Less ♥♥♥♥♥♥♥♥ than in the second game.
I will chime in in support of this; I have actually encountered more bugs in the second game than the first! Though I realize I am in the minority on this one.
In regards to the walking, I have experienced situations where the direction the character is facing "locks up" until a battle or screen change, and makes movement (and avoiding enemies) a huge pain. Even though the first game only has 4 way movement, it seems much easier to avoid things. That may be a design issue, since FH2's screens are much more claustrophobic and cluttered with collision objects.

I haven't encountered any of the bugs you mentioned there. On the other hand termina has lots of those broken mechanics you mentioned.
Sometimes gas canisters do not explode when you hit them.

The story in termina also lacks a lot of focus, which is the reason I prefer the first game. In Termina, some of the characters have no reason to be in prehevil at all. The Battle Royal aspect of the game (which is supposed to be the main feature) is unfortunately most unfinished part of the game. It feels completely seperate. Contestants don't really react in any way when you kill them. You can trigger events in non chronological order accidentally which breaks the immersion. Story overall lacks focus in termina, while in original tittle every character had a clear and unifying goal (but different reason) to explore the dungeons of fear and hunger, which was to find Le'garde.
Both of the games are good. And both of them have a bugs. But I never encountered any bugs any of my playthroughs which would make the first game unplayable. You are making it a bigger deal than it truthfully is. I didn't use any mods, and I was able to have good time.
But yeah. No reason to skip the first game.
