C:\Users\<User>\Documents\CAPCOM\RESIDENT EVIL 5\<User Name>

You'll want to delete the savedate.bin file.

^For the GFWL version or for the steam version...
C/Program Files/Steam/userdata/<yoursteamusernumber>/21690/remote

OK! The problem is that the file gets restored for some reason. Maybe there is a way to reset gameplay data through steam?

OK! Now next question:
Is it possible to reset Steam cloud data?

After you save the game one time you can turn on cloud saves again and choose the newest one on your HDD as the save you want to be stored in the cloud

For information sake, now that GFWL is out (at least I believe this is the cause), the game simply tell you it cannot find a save file and as sich you cannot save your progress. So you start the game from scratch, nice, but you will need to finish it before leaving it. Less nice.

I as given a solution I wished to share here, though. Instead of deleting the save file, just open it with the notepad and remove a couple of lines. Then, the game will mention the save files being corrupted. Ask him to try again and then it will propose you to create a new save file.

Agree and enjoy the game as if you just created a new account and bought the game once more.

PS : And if like me you just wanted to play the game from scratch with a friend coming over for the week-end but then wish to get the save file back after that, remember to hide a copy of the save file somewhere else, obviously.
