Vests are good if you're getting hurt a lot by that type of damage. On Veteran and Professional they make the game a LOT easier, but even on Amateur if you're getting hit a lot and have inventory space to spare might as well get a vest.
For the Achivement you can have them sold. No need to keep them in the box.
Depends how often you get hit. It might be usefull in late game against mostly melee based bosses (and if QTE based dodging doesnt work that well for you)
However, this counts mostly for the diffculties easy, normal and veteran.
On Professional the melee vest wont help you that much at all. It only reduces mild damage. For example when a dog bites you on the run. Most other attack like a hit from a standard majini with a club will still put you in crtitcal condition.
But that only counts for the Melee vest. The BP Vest is actually usefull.
(Wont save you from a minigun barage but does help to prevent critical state from a crossbow bolt)
On professional is true all the hits will put you on Danger but against wesker theres a kick you can survive if you had the melee vest.
