Undead are nice too, but i think not as "easy" as Orcs
I'm also new to Blood Bowl (My brother gifted me an early version long ago but I couldnt get into it) Then saw that TotalBisquit is playing in a league with other youtubers and got caught up in it, bought the Chaos Edition and tried some teams.
I've settled on the Lizardmen, and although its on easy I havent lost a game yet.

I bought 1 Kroxigor, 6 Saurus and 4 Skinks to start with along with 2 re-rolls, and added a substitute Skink later
I position them like this:

It allows me to quickly lay down the pain in the mid (More often than not that is) and move the sides to block the others, then move the Skinks up to hold the rear, most of the time I smack down the ball carrier and then a skink runs in and grabs it, then dodge out (Which they are suprisingly good at)
NOTE: THIS CAN BE HORRIBLE ADVICE AND ONLY WORKED FOR ME BECAUSE OF SOME HORRIBLE COSMIC FLUKE!
I play orc on the side aswell and those bloody elfs just run past me without problem, I just smash the crap out of the opponents and kick them while they are on the ground to take keyplayers out of the field, note I buy 1-2 chances to bribe the judge.
Skaven is okey aswell, really good runners but quite weak and then Dark elf worked good for me aswell.
So in my case teams that have good runners work well with my kind of gameplay, you just find the kind of team that fits your playstyle.
I am a newb when it comes to this game though.
Minotaurs are unreliable. Wild Animal means that on 50% of normal actions they won`t do anything and even if you blovk or blitz it can still fail on a roll of 1. Add to that they only get general access, and thus the all important Block skill, on double rolls, have Frenzy and Loner...
There`s always a risk with Minotaurs. The upside is they start with Mighty Blow and Horns, and they get Strength and Mutation access, so a few skillups on a Minotaur will make it an absoloutely brutal LOS player, just from their presence. And once you get Claw you can pretty much count on them injuring at least one player per game. They are also nice counters against other Big Guys - Deathroller can have all the AV he wants in the face of Claw, Mighty Blow and 5+ ST.
He is. At the same time, he's one of the better BGs.
Like all BGs, the Minotaur has advantages and disadvantages.
+ : Horns make him effectively ST6 when blitzing.
- : That requires you to use your one blitz per turn on the Big Guy.
+ : Frenzy adds an additional chance for a knockdown if you only get a pushback.
- : It can also backfire hilariously, landing you with a 1DB or worse that you probably won't even be able to reroll thanks to Loner.
+ : Wild Animal is the only BG negatrait that doesn't remove tacklezones, so even if your mino takes a turn off, they'll still be an obstacle for your opponent.
- : It makes getting your mino to stand up again after a knockdown a major pain in the ass unless you're using your blitz for it. It also causes trouble if a dodgy opponent manages to get everybody out of the mino's TZs...again, you're probably going to need that blitz to make the bull move.
Finally, and this is the big one:
+ : Mutation access means Claw as your first skill. This combined with Mighty Blow makes the Mino the second best 'killer' Big Guy in the game (after the spectacular - and spectacularly overpriced - Bloodthirster).
Note that this final bit doesn't apply to Chaos Dwarf minos, they only get to mutate on doubles, which reduces the value a bit.
One interesting thing to do with a Chaos minotaur is to give them Tentacles (second skill, usually, but if you know you're going to go up against dodgers soon it could also be the first). It pretty much ensures that your mino will always have adjacent targets to bash around without running into that pesky Wild Animal issue. It also frustrates the hell out of agility-based teams.

outrun combat specialized teams or team up on them with the higher movement
beat running teams down, dont get left too far behind

currently using
1 ogre for teh beatings (got block, tackle, guard)
4 blitzers ditto gave em tackle + guard (they start w block)
4 linemen, average no skills guy (gave them block+tackle, armor/str if lucky)
1 thrower, specialized for throwing and some fighting (lucky +1 str, accurate pass, needs block)
1 catcher, only str 2 and armor 7, but starts with dodge. gave him dauntless, block, armor+1, movement +1 (he makes by far the most points with his touchdowns)

if u like running the ball try skaven, they have one of the fasted players in the form of the gutter runner, 9 MA which is amazing to start off with teams like dwafs just can't keep up with u,they tend to run into the oppsitons half and the throwers pass the ball down and they get the TD , also mutions there great, two heads can pretty much insure u can dodge around very easyliy with the gutter runner, extra arm maybe? claws or horns are also good for stormvermin. hope this helped! :D
Now, granted, if you let your TV get high enough you'll start to get creamed by teams that do better at high TVs, but that's true of most rosters.
I suppose it comes down to what you mean by "good for beginners".. something like orc or human will expose you to a wide variety of strategies, but you'll lose over and over, likely as not. I tend to recommend a team you've got an advantage with, so that you don't get discouraged by all the losing on merit of not doing so much of it. Later you'll be able to dive into other rosters and will already know what you're doing.
Norse are attractive but the low AV is a big problem, dwarves are hard to hurt but the lack of speed is again a big problem.
I will say that goblins are very difficult to get started but once you start getting some levels on em they can become a scary team to face.
